White Chocolate Raspberry Granola Bars

Here's a Tuesday Treat for you...



Years ago, a friend of mine gave me a copy of a granola bar recipe that she liked. I made some adjustments over time and my last variation was DELICIOUS! :) 
So, I wanted to share it with you!
For starters, I doubled the recipe so get out your big mixing bowl.
Just trust me, you're going to want to make lots!
So, here it is.
 Introducing,...

White Chocolate Raspberry Granola Bars
5 c. quick oats 
1 c. Rice Krispies
1/2 c. coconut 
1/3 c. mini choco. chips
1/2 c. White chocolate Chips
1/2 c. FD Raspberries, crushed
1 c. brown sugar 
 1/4 c. chia seeds, optional
1/2 c. ground flax seeds, optional
1 t. salt
1 c. butter, melted 
1/2 c. honey
1 t. vanilla

Mix all ingredients except for the butter, honey and vanilla in a large bowl. 
Pour last 3 ingredients into the bowl and mix well. 
Add an extra squirt of honey if you added the optional ingredients.
Pour mixture onto baking sheet lined with parchment paper. 
Press firmly into pan. 
I like to cover it with wax paper and take my rolling pin to it.
Bake at 350 for about 25 minutes or until edges start to turn golden. 
Remove from oven and let cool. 
Once cooled, carefully cut into bars and store in air tight container.

I've also made these with FD Strawberries, which were great!  
I'm thinking of trying an Apple cinnamon variation next.
