White Chocolate Raspberry Granola Bars

Here's a Tuesday Treat for you...



Years ago, a friend of mine gave me a copy of a granola bar recipe that she liked. I made some adjustments over time and my last variation was DELICIOUS! :) 
So, I wanted to share it with you!
For starters, I doubled the recipe so get out your big mixing bowl.
Just trust me, you're going to want to make lots!
So, here it is.
 Introducing,...

White Chocolate Raspberry Granola Bars
5 c. quick oats 
1 c. Rice Krispies
1/2 c. coconut 
1/3 c. mini choco. chips
1/2 c. White chocolate Chips
1/2 c. FD Raspberries, crushed
1 c. brown sugar 
 1/4 c. chia seeds, optional
1/2 c. ground flax seeds, optional
1 t. salt
1 c. butter, melted 
1/2 c. honey
1 t. vanilla

Mix all ingredients except for the butter, honey and vanilla in a large bowl. 
Pour last 3 ingredients into the bowl and mix well. 
Add an extra squirt of honey if you added the optional ingredients.
Pour mixture onto baking sheet lined with parchment paper. 
Press firmly into pan. 
I like to cover it with wax paper and take my rolling pin to it.
Bake at 350 for about 25 minutes or until edges start to turn golden. 
Remove from oven and let cool. 
Once cooled, carefully cut into bars and store in air tight container.

 Enjoy!

I've also made these with FD Strawberries, which were great!  
I'm thinking of trying an Apple cinnamon variation next.

What's in a bucket?

Thrive Life started carrying products in 6-gallon buckets a while ago. And, while I have sold many of them, I hadn't actually bought any for myself until recently.


Each bucket came in its own box, with handle punch outs, which the UPS man said he appreciated! :)
Look at that pretty red Gamma Lid that comes with it!  
Having heard all sorts of stories about opening and closing bucket lids, I knew the Gamma Lid was going to be so much better. 
And it was! 
 It took me longer the peal the tape off than it did to unscrew the lid. This also means I never have to go searching for a bucket opener to spare my hands!


And inside, a nice sealed mylar bag to keep everything sealed up nice till you're ready to start using your food.

 Of course, I opened mine right up. 
It's baking season, and I am excited to make another batch of granola bars, and then dive into some no-bake cookies, granola, and all sort of other goodies to share with those around me! :)

Food for your Adventure

So, you want to go for a hike
Go on a backpacking trip?

I have been doing mail drops for a 
2013 Appalachian Trail thru-hiker 
this year. It's been fun!

Rather than plain macaroni & cheese in a box from the stores along the trail, I am sending mac & cheese with ground beef & broccoli
Instead of ramen, I send noodles with chicken bullion, chicken, peas & corn.
Along with dehydrated refried beans I add ground beef, onions & cheese.
To the plain granola I add some fruit.
You get the idea...
 She said everyone is jealous of her vegetables!
